Equipment needed to control a smokehouse

Hi,
I need to control a smokehose, the power element that I am using is 220V 5500W and a 110V fan to produce hot air. What king of equipment should I buy in order to control it properly. The smoking cooking chamber is 3 long x 2 wide x 4,5 tall feet. The temperature that I need to smoke and cook should be between 160°F and 180°F.
Also I need to make a similar smokehouse but bigger. It is 4 ft x 4 ft x 8 ft. It will be heated by gas. If somebody could tell waht kind of a burner and controlling equipment should I use for this one.

How do you want the fan to work? Does it need to be controlled? If the fan is synchronized with the heater, you can just use the controller SYL-2352 or SYL-2362. If you need the ramp/soak function, you can use the controller SYL-2352P.
The probe you can use is TC-K3MM or PT100S. You can choose one depending on how you want to mount the probe. You need a 40A SSR and a heatsink for the SSR.

If you don't want to use the SSR, you can use the controller SYL-2342, SYL-2362 or SYL-2342P with a 220V coil contactor.

For the gas, you need to use the controller with relay output, such as SYL-2342, SYL-2362, or SYL-2342P.

You can try to find the heating element from Grainger.com.

B) maintain the temperature for a specific period time,
C) turn on/off the relays (alarm relay) after process reach a specific step.
D) jump (for loops), run, hold and stop after process reaches a specific step.

Common applications for this controller include controlling the temperature of glass kilns and heat treatment ovens."

this may not be the correct place for this but i am in need of some education

I am needing to build a system for smoking in an old fridge

I am looking at your controllers such as # Model: SYL-43X2 and one of your SSRs and am planning on using a standard 240volt oven element.

in the PDF, it shows the wiring and only 2 wires from the power source in 240v on both the SSR and controller.

where does the common/ground wire go?

and do I need another relay or what to run the element as it only has 2 connectors also?

is the whole thing using the metal of the fridge as the common and all grounded thru that?

or is that a good way to be electrocuted?

The power supply for the controller is isolated. The ground wire is not needed since it has a plastic shell. You just need to connect the 2 hot lines (or 1 hot, 1 neutral) for the controller. The controller will not switch the ground wire. So you just bypass the controller and connect the ground directly to the fridge.

I will just use the metal of the fridge as the common ground then. usually you see a ground symbol in the schematics showing where the ground termination is needed
