SMD-200 is designed for controlling food smoking processes.  It can also be used for an oven or kiln when a second probe is needed for monitoring the process. It uses a PID algorithm to automatically adjust power to the heater to compensate for disturbances from sunlight and wind. It can hold the smoking temperature within one degree.  This controller has a very similar function to our " dual probe plug-n-play smoker controller (model WSD-1200GPH or WSD-1501GPH). The main difference is that this component-type controller can be configured to handle a much larger smoker that requires more than 1800 Watts of power. Users can choose different options for SSR relay size and power voltage. It also allows the user to integrate the controller into the smoker.  In addition, it has an extra relay output and accepts either PT1000 RTD sensors (not PT100 RTD sensors) or type thermocouples. If you want to use two sensors at the same time, they must be the same type of sensors, i.e., either two PT1000 sensors or two type K thermocouples (see typical part lists here) The PT1000 RTD sensor provides high accuracy, the thermocouple sensor provides wider temperature range. Please choose the PT1000 sensor options above accordingly.

The controller has two sensor inputs. One sensor is for measuring the smoker cabinet temperature and the other sensor is for measuring the food temperature. The controller regulates the power output of the controller based on the temperature difference between the cabinet sensor and the set temperature. The food sensor is used to check the internal temperature of the food. It will tell the controller if it is time to change the temperature of the cabinet or if the smoking is finished.  

The cooking temperature profile of the controller can be programmed in up to 6 steps.  The ending criteria of each step can be determined by either preset time or preset internal food temperature.  For cooking small-sized foods or smoking the surface of the food, users can use the preset time as a reference point to finish the step. Using the internal temperature as the reference point is important for cooking large-size food because it is difficult to know how much time is needed. For example, You can program the temperature to start at 120°F for 1.5 hours of smoking, rise to 132 °F for 2.5 hours, and finish at 190°F until the internal temperature reaches 170°F. Then, the controller can either turn on a buzzer to let you know the food is ready or drop the temperature to a lower set point to keep the food warm until you are ready to serve it. This will save you time as opposed to waiting for the smoker to change the settings manually when each step is finished.  The program function can also be turned off so that the user can use it as a single set point controller for simple operations.

The main output of the controller is a 12 V DC output. It is for controlling a solid state relay (SSR). The solid-state relay will be used to switch the power of the heater. The controller also has two small electromechanical relay outputs. These two relays are synchronized with the smoking program step. Each one can be synchronized with one programming step.  For example, the user can use one relay to turn on a smoker generator at step 2 of the cooking. Then, the user can allow the other relay to control a shower/chiller to cool the food at the last step of the cooking.

The controller has the ability to store up to 8 temperature profiles for different recipes. 

Notes:

  2. PT1000 probe options are also offered at the same time. 2 x Connectors (PT1KCON) are included. 
  3. This controller was originally designed for an electric smoker, but it can also be used for gas/propane smokers. See here for details. 
  4. As of August 2022, we start shipping SMD-200B. Compared to the older model, the new version has a new parameter "W2D" in the 155 menu to determine whether the food sensor reading or the set value (SV) should be displayed in the lower display window. But the parameter "r1" and "r2" can only be set in the range from 0 to 6, i.e., the relays can be activated in only one step.   
  5. As of January 2023, a new model SMD-200C is available upon inquiry. It is similar to SMD-200B but the parameter "r1" and "r2" can only be set in the range from 0 to 63,  i.e., the relays can be activated in multiple steps.
  6. On October 30, 2023, we started to ship SMD-200C. The older version, SMD-200B, has been discontinued.
